Die Brennerei wurde zwischen 1972 bis 1974 durch International Distillers & Vintners Ltd (IDV) erbaut. Ursprünglich wurde die Brennerei gebaut, um Malt-Whisky für Scotch Blended Whisky zu brennen. Allerdings war die Qualität des Auchroisk Whiskys so gut, dass man sich schon im Jahre 1978 entschloss, ein Singleton Particular mit 43 % abzufüllen.
Das Wasser der zur Region Speyside in den Highlands gehörenden Brennerei stammt aus dem Dorie‘s Spring. Das Malz wird von Pauls Malt in Carnoustie bezogen. Die Brennerei arbeitet mit einem Maischbottich (mash tun) aus Edelstahl und acht Gärbottichen (wash backs). Destilliert wird in 4 Wash Stills und 4 Spirit Stills. Dieser Auchroisk verbrachte seine erste Reifephase in ehemaligen Bourbonfässern, um dann seinen Schliff in einem ehemaligen Madeirafass zu bekommen.
Aromatisches Bukett, geprägt von floralen, zart-fruchtigen Aromen, unterstützt von Gewürzen, Tabak und eine Spur Feuerstein mit Vanille und braunem Zucker – voll und kräftig am Gaumen mit Frucht, Honig, reife Trauben, Röstaromen, Vanille und zarten Rauch – ausgewogen und angenehm.
